Instructions:
1. Season the meat with salt and place it in a deep pot with 3 tbsp hot olive oil. Sear the steaks on both sides. Remove and put it in a plate.
2. Reduce the heat and add remaining tbsp olive oil to the pot. Stir fry chopped onion, garlic, and red pepper. Season with salt, ground chili pepper, oregano, and bay leaf.
3. Once onion golden, add seared meat and pour the white wine. Mix everything with a wooden spoon and cook until wine evaporates. Add chopped tomatoes and cubed carrot and sweet potato.
4. Pour the vegetable broth, put a lid on the pot, and reduce heat at a minimum. Cook for 1 hour, stirring occasionally. Add peeled and chopped potatoes and cook for 30 min or until vegetables and the meat tender.
5. Let settle 5 min before serving.
